Chicken Avocado Soft Taco’s
Servings 4
Ingredients: 2 Chicken breasts, 2 avocados, 1 jalapeno, ¼ red onion, 4 gloves of garlic, 4 limes, cumin, cilantro, olive oil, whole wheat tortillas (optional), cheese, lettuce, tomatoes.
Chicken marinade: Juice of 3 limes, 2 cloves of garlic minced, 1 TBSP of cumin.
Marinate chicken for 10 minutes. In medium sized bowl mix together ½ TBSP of olive oil, 1 TBSP of cumin, 2 cloves of garlic, ¼ red onion diced, 1 TBSP of cilantro chopped, 1 jalapeno diced, juice of 1 lime & 2 avocados diced. Grill chicken and cut into stripes or cube size pieces. Place tortilla with lettuce, tomato and cheese. If looking for a low carb solution, omit tortillas and wrap in lettuce.

- The LAB, based in Glendale, Arizona, is the Southwest's premiere mixed martial arts training center. This state-of-the-art facility has over 14,000 square feet of training area and four training rooms.
- In addition to three rooms of grappling and mat space, The LAB offers a full weight and cardio room which includes cardio equipment, weight machines, free weights and plyometric equipment. LAB members also have access to locker rooms, child care, massage therapy, spa services and a fully stocked retail store.
- The LAB employs a world renowned team of instructors with over 100 years of combined training experience in multiple disciplines, to ensure that each member exceeds their personal goals. Programs are offered in Muay Thai, Kick Boxing, Gracie Jiu-Jitsu, Boxing, Grappling, Mixed Martial Arts and Sports Conditioning.
- Classes are set up to accommodate all ages and skill levels, from the individual fighter to every member of the family. Kids Programs
Kids Corner with Coach "K"
A move that we are working on in the kids kickboxing class is the roundhouse kick. This kick is designed to strike your opponent landing the shin portion of your leg to either your opponents thigh, body or head.
To properly throw this kick effectively your first step must be just to one side of your opponents back leg. Lifting your opposite leg bending at the knee while pivoting on your planted foot, explode your hips towards your opponent while extending your striking leg toward the opponents body, landing your shin on your opponent. It is very important to gage your distance from your opponent. The most common mistake with this move is not pivoting the planted foot. Remember, proper distance and pivoting will improve your roundhouse kicks! It only takes one mistake to end the fight, so keep your hands up!
